Easy Fruit Pizza

Sugar Cookie Pizza Crust
  • 1 cube butter softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 1/2 cups flour
Frosting Layer
  • 8 oz package cream cheese
  • 1 cup powdered sugar
Fruit topping ideas
  • Apples
  • Bananas
  • Blueberries
  • Grapes
  • Kiwi Fruit
  • Mango chunks
  • Peaches
  • Raspberries
  • Strawberries
For Sugar Cookie Pizza Crust
  1. For crust, cream butter and sugars together.
  2. Mix in eggs and vanilla and beat well.
  3. Add dry ingredients.
  4. Form dough into a large ball and wrap in plastic wrap.
  5. Refrigerate for 1 hour.
  6. With a rolling pin, roll dough out in a large circle and gently place on a pizza pan or stone sprayed with non-stick cooking spray or greased. You can also use your hands to press the dough evenly on the pizza pan or stone.
  7. Bake at 375 degrees for 12-15 minutes. Pull out of the oven when the edges and top start to lightly brown.
  8. Let cool completely.
For Frosting
  1. Mix cream cheese and powdered sugar together until smooth. If you want a sweeter frosting, you can add more powdered sugar.
  2. Spread on cooled sugar cookie crust
For Fruit Topping
  1. Wash and slice fruit and decorate away!
  • Prep time does not include the one hour it takes to refrigerate cookie dough.
  • To save time, you can use store bought refrigerated sugar cookie dough.
